We are very pleased to announce a new member of the Epting Events’ family, Eddie Russell. Eddie will be working in the kitchen, designing menus (stay tuned for our new 2011 menus!) and in the field at your wedding or event.

Eddie is part of a group called The FourCoursemen, which hosts five course dinners twice a month for 28 guests. The FourCoursemen also has a pilot airing on the Cooking Channel for the last time tonight at 9:00 PM and then four hours later at 1:00 AM EST. For our Athens readers, that’s channel 168 for Charter, 232 for DirectTV and 113 for DISH. For more details on the show, visit the Cooking Channel blog.

1. What made you decide to become a professional chef?
I took a year off before I went to graduate school and started cooking at Five & Ten, and after doing it for a while it’s what I fell in love with.

2. Where did you receive your training from?
I would say I was self-taught. Hugh Acheson was my mentor at Five & Ten, and I learned a lot from working in their kitchen.

3. What’s your favorite meal to cook?
I don’t really cook for myself, but if I had to choose my favorite meal to cook and eat is anything Vietnamese or Thai.

4. Do you have a favorite gadget?
This is cheesy but any shun knife made by Kershaw.

5. Where do you get inspiration from for new recipes?
The cool thing about being a chef is you can really get inspiration from anywhere; any meal you eat, reading magazines, and talking to people.

6. Tell us about The FourCoursemen.
Damien and I have been friends for 14 years. When he moved back to Athens; him, Patrick and Randy started cooking together. One night, I came down and we started cooking, and haven’t stopped since. We have added two more of our best friends, Matt and Nancy. Now we have a whole team of friends who help us out, and hopefully will never stop doing dinners in Athens. We like to think of ourselves as an underground restaurant.

7. What convinced the Cooking Channel to do the show?
We were featured in Food & Wine in the Thanksgiving issue of 2009, and that brought us to the attention of a few folks. The great guys at Two River Pictures believed in us and helped put our name out there. The Cooking Channel seemed interested, and we’re hopeful that something will happen in the future after the pilot airs tonight one more time. (It has aired over the past couple of months almost 15 times!)

8. Describe your favorite meal.
When The FourCoursemen went to Chicago in 2009. We had the greatest dining experience of my life at Alinea. We had a lot of great food in Chicago, but this restaurant made our trip. (It was a twelve course tasting menu, so Eddie won’t go into the details.)

Eddie has already enhanced our customers’ menus with our Executive Chef Janice Witcher, and we can’t wait to see what else he has in store for us! Welcome to the team Eddie!

Mary + Mark were featured on Weddings Unveiled Blog and we couldn’t more excited to share it with our readers!

Here’s what they had to say about their wedding…

It was a beautiful day for Mary and Mark’s October nuptials photographed by Melissa Schollaert Photography at The Farmhouse Inn nestled right outside of historic Madison, GA. The event was designed with the natural country setting in mind, working from an inspired palette of powder blue, brilliant white, khaki, golden yellow, muted orange and mossy green accents. Mary wore a beautiful Pronovias strapless gown with gently ruched detailing, while her bridesmaids wore short powder blue dresses with varying necklines to flatter each girl’s figure. The groom and groomsmen wore black suits paired with white button downs and persimmon ties and each wearing a boutonniere of hypericum berries, craspedia and a single muted orange rose on their lapel. A rusted old van set out on the sprawling farm provided a unique backdrop for some wonderful country, vintage inspired portraits of both the bridesmaids and groomsmen before the ceremony. Mason jars with sprigs of mixed white blooms and craspedia hung from shepherds hooks along the outdoor ceremony aisle, which was set on the lawn under a gorgeous old tree. Two little boys carrying a sign reading, “here comes the bride” led the way for Mary’s walk down the aisle carrying a bouquet pale orange roses, craspedia, delicate white blooms and accented with blue thistle.

Set out on a brick patio in the Courtyard Garden, guest enjoyed a cocktail hour of fresh teas and lemonades served out of mason jars. A few cocktail tables were situated around the patio covered with a khaki linen base and set with an embroidered white overlay. The reception was situated in the garden lawn right next to the garden patches where fresh vegetables were being grown. Garden lights hung from the perimeter and provided a festive glow over the intimate dinner space. Round guest tables were set with khaki linens and white overlays which paired nicely with the natural wood chairs. Mason jar centerpieces created by Birch Blooms in the event palette were nestled in moss that adorned the center of the table along with small votive candles. Guests shared their advice and wishes for the happy couple leaving words of encouragement on the couple’s expression tree that stood on an exposed wood table as they entered the reception space. The tree adorned with small little glass bud vases with muted orange and delicate white blooms was filled by the end of the night with marriage advice and dreams for the happy couple. Don’t miss any of the details of the day, including the pretty powder blue ceremony programs bound with twine and the couple’s unique fingerprint family tree guest book. Lee Epting is famously known for his rain deposit in the Southeastern area, he’ll guarantee no rain on your wedding day for a small fee of $50. If it does rain, you get the $50 back. He has a 99% success rate. He does not offer this service in April for obvious reasons. It would be absolutely wonderful if Lee could figure out a way to make a snow deposit, but instead will guarantee it to snow on your day. Granted, you wouldn’t want snow where you are trapped in your house and have to cancel your wedding, but more of a romantic snow. Unfortunately this is just wishful thinking, and you’ll just have to admire the snow pictures for now.

We need your help to end domestic violence! Project Safe has teamed up with local Athens’ stars and dance instructors to bring us our own Dancing with the Stars competition. Voting is now open for your favorite dancing couple! Our very own, Ashley Epting, is dancing with Allison Hayn on March 6, 2011 at 7:00 at the Classic Center.

It is vital for the Athens’ community to join together to help support the families and women in need of Project Safe’s services.

Project Safe is a lifeline for many individuals; whether they need a safe place to sleep away from their abusive partner, a protective order, a new set of clothes from the thrift store because they left home with only the clothes on their back, counseling or often times a fresh start. The facility provides childcare, college tuition, counseling and transportation, and outreach resources.

By November 30, 2010 they had already received 1823 crisis calls, assisted 1138 new clients at the outreach office and maintained a 94% occupancy at the emergency shelter.

It’s frightening to think this could be happening to our parents, children, friends, coworkers and relatives. Together we can put an end to domestic violence, by joining together to provide resources and strength to people who are in need of these services. Without the financial support for Project Safe, it’s hard to tell what might be in store for these individuals.

Every vote, every show ticket and every sponsorship dollar has a direct and meaningful impact on a woman or child trying to escape violence at home.

First of all, let me begin by saying congratulations!! Now, let’s get down to business.

The Date
There doesn’t need to be a whole lot of pressure when deciding a date. If you’ve always dreamed of an October wedding, pick a weekend that fits into your schedule easily. If you’re waiting to finish school first, pick a date after graduation that gives you plenty of time to focus on the final moments of planning. There is also the possibility that you have no particular month in mind, just a time of year.

The Location
When deciding on a location…
If you happen to be one of the brides that does not have a date set, but you also are trying to get one of most the popular venues… this is the perfect opportunity to find out when the venue is available, and go with that date.

Decide if you want to get married on-site, and see if there is a good, level area to make that happen. We suggest going out to the ceremony site and see how the sun will be shining at the particular time of day of your wedding. You want to try to avoid the sun beaming into everyone’s eyes as they are watching the ceremony.

If you’re looking to get married at a church, calculate how far it is from the reception site. You want them to be semi-close in proximity. After all, people are there to celebrate not drive all over!

If you want an outdoor wedding, remember most places will require you to tent the area. Also, look into the restroom situation. If you do not like the idea of having restroom trailers at your wedding, look for a facility that is outside with indoor restrooms.

Ask for a copy of the facility’s rules and regulations. Find out what time your band has to stop playing. See what time your caterer can get in the day of or even the day before. Do you have access to the whole place? Do you have to make sure the floors are mopped? Can you have open flames? What’s the alcohol policy? Can you choose your own caterer?

The Food
Selecting the perfect caterer doesn’t need to be tricky. Once you’ve selected your date or even if you haven’t, call and check the availability.

Decide whether you want stations, a buffet, a served dinner, family style. Look at the menus, and decide what items you know you really want to have. When creating a meal, think about colors and how it will look presented on the plate. You don’t want all of the same color and you don’t want it to look dull.

If you’re a very picky eater, try to remember your guests might not be. It is good to incorporate things you like, things the groom likes, and things your guests will enjoy.

Contact the caterer to set-up a tasting and consultation.

A lot of caterers often times are able to coordinate rentals, floral, linens, etc. We highly recommend allowing them to handle these items. It is worth the extra 10%, than trying to deal with deliveries or problems the day of.

Photographer:
Look at the photographer’s work online, and ask your other vendors for recommendations. This is not an area to skimp on. You’ll want to keep these pictures forever. Also, it’s wise to get a contract where you get the rights to all your pictures. This allows you to print any of them anytime you want for a lower amount.

Once you have a date, venue and caterer down; the rest should be a piece of cake. Remember to enjoy this time and don’t stress too much! And if something does go wrong, it will be one hell of a story later!
